    How to Make Perfect Oven Fries

    These oven fries are just as delicious as those you get from deep frying—golden and crispy on the outside with a creamy, tender interior. The trick is to follow three simple steps: rinse, partially cook, then bake.

    Russet potatoes: For the best results, use russet potatoes and cut them into sticks. Russet potatoes have a high starch content, which will produce fries with a crispy exterior and fluffy interior, whether you are baking or frying them.

    How to Make

    1. Start by rinsing the sliced potatoes in cold water to remove some of the sugars on the surface. This helps them get crispy when they're baking instead of turning tough. Then, give them a quick boil in salted water. This pre-cooking step ensures they're fully cooked inside while getting that golden brown exterior. It also makes the fries fluffier inside, so they don't get soggy.

    2. After the potatoes are partially cooked, you can leave them for up to an hour before baking. Meanwhile, preheat your oven and baking sheet. When you're ready to bake, toss the potatoes in a bit of oil and spread them on the hot baking sheet. Make sure there's space between each fry so they can get crispy all around.

    3. Once they're out of the oven, sprinkle your favorite salt on them while they're still hot. These oven fries are great on their own with just a sprinkle of salt, but you can also try dipping them in sauces like mayonnaise or ketchup.

    You can make oven fries are just as crispy and tender as those that are deep-fried, if you follow these steps. The recipe can be easily doubled, just use two baking sheets so nit to crowd the potatoes. The potatoes need room around them so they can get crispy.

    Ingredients
      

    • 2 large russet potatoes, peeled and cut into sticks
    • Kosher salt
    • 2 Tbs. olive oil

    Instructions
     

    • Preheat the oven to 450°F and place a baking sheet in the oven,
    • Rinse the potato sticks in cold water to remove starch.
    • Parboil them in salted water for 3 minutes, then dry them on paper towels.
    • Toss the potatoes with olive oil and spread them on the hot baking sheet.
    • Bake for about 30 minutes, turning them over occasionally until they're crispy and browned.
    • Sprinkle with salt and serve immediately.
