You can make oven fries are just as crispy and tender as those that are deep-fried, if you follow these steps. The recipe can be easily doubled, just use two baking sheets so nit to crowd the potatoes. The potatoes need room around them so they can get crispy.

- 2 large russet potatoes, peeled and cut into sticks
- Kosher salt
- 2 Tbs. olive oil
Preheat the oven to 450°F and place a baking sheet in the oven,
Rinse the potato sticks in cold water to remove starch.
Parboil them in salted water for 3 minutes, then dry them on paper towels.
Toss the potatoes with olive oil and spread them on the hot baking sheet.
