Here are 7 tips to make really good guacamole. Because we've all tried it plenty, but how many times is it great? The secret lies in creating the perfect balance. From selecting the right ingredients to mixing them just right, follow these tips and make guacamole that's perfect every time.

1. Start with the Best Avocados
Like many fruits and vegetables, avocados from different regions taste different. I find Hass avocados from Mexico to be the creamiest tasting, but other Hass work, too, as long as they’re perfectly ripe. Look for avocados that yield slightly to gentle pressure when you squeeze them. They should be firm yet give a little, indicating ripeness. If they feel too soft or mushy, they may be overripe. Additionally, the color under the stem should be green; if it's brown, the avocado might be overripe or bruised. Buying avocados a few days in advance and letting them ripen at room temperature can ensure they're ready when you need them.
2. Mash Right
Once you have ripe avocados, it's crucial to mash them properly for the perfect guacamole texture. Start by halving the avocados and removing the pits. Scoop out the flesh into a bowl using a spoon. Use a fork or potato masher to gently mash the avocado until you achieve your desired consistency. Some prefer chunky guacamole, while others like it smooth. Be careful not to over-mash, as this can make the guacamole too creamy.
3. Balance Flavors
Great guacamole has a balance of flavors – creamy avocado, tangy lime, savory onion, spicy jalapeño, and fresh cilantro. Taste as you go and adjust the seasoning accordingly. Lime juice not only adds flavor but also helps prevent the avocados from browning. Start with a squeeze of lime juice and gradually add more to taste. Similarly, add diced onions, jalapeños, cilantro, and salt gradually, tasting as you mix until you achieve the perfect balance of flavors.
4. Go for Texture
Texture is another critical aspect of guacamole. While mashed avocado provides creaminess, adding diced tomatoes and onions contributes a satisfying crunch. For extra texture and flavor, consider adding ingredients like charred corn, diced bell peppers, or even pomegranate seeds. Be mindful of the size of the diced ingredients – aim for uniformity to ensure a consistent texture throughout the guacamole.
5. Blend ahead
Make a paste of onion, hot chile, cilantro, and a good dose of salt. Mashing these ingredients together before mixing them with chunks of avocado ensures that all of their flavors are evenly distributed.
6. Add-ins
While traditional guacamole typically includes avocado, lime juice, onions, jalapeños, cilantro, and salt, don't be afraid to get creative with additional ingredients. Diced mango or pineapple can add sweetness and contrast to the savory elements, while crumbled cotija or feta cheese provides tanginess and richness. Experiment with roasted garlic, tomatillos, or even bacon for unique flavor combinations.
7. Allow to Sit
For the best-tasting guacamole, allow the flavors to meld together by letting it sit for at least 15 to 30 minutes before serving. This allows the ingredients to marry, resulting in a more harmonious flavor profile. Cover the guacamole with plastic wrap pressed directly onto its surface to minimize air exposure and prevent browning.

Classic Guacamole
Ingredients
- ¼ cup chopped fresh cilantro
- 2 Tbs. finely chopped white onion
- 1 Tbs. seeded, minced fresh serraño or jalapeño, more to taste
- Kosher salt
- 2 6- to 7-oz. ripe Hass avocados, preferably Mexican
- 1 Tbs. fresh lime juice; more to taste
Instructions
- Using a mortar and pestle, or the side of a chef’s knife, mash half of the cilantro, the onion, the chile, and ½ tsp. kosher salt to a paste. Leave the paste in the mortar, if large, or transfer it to a serving bowl.
- Halve and remove the pits of the avocados. Use a spoon to scoop the avocado into the bowl. Add the remaining cilantro and the lime juice, and mash the avocado gently with the pestle or a fork, leaving some chunks. Season to taste with more lime juice, salt, and chile.
- The guacamole is best served after it sits about 15 minutes, but can be made 1 hour ahead; cover the surface with plastic wrap and keep at room temperature.
