    Garlic Parmesan Chicken Bites

    These Garlic Parmesan Chicken Bites will instantly earn a spot in your weeknight dinner rotation for 3 reasons: First, the dish uses only 5 ingredients; next, it's ready in under 20 minutes, and lastly, it tastes amazing—juicy, tender chicken coated with garlic, butter and parmesan. Need I say more!

    Garlic Parmesan Chicken Bites

    Serve these bites with some lemony rice or couscous and crisp, steamed vegetables.

    Essential Ingredients

    Ingredients for Garlic Parmesan Chicken Bites.

    Chicken: For this recipe, you can use either chicken thighs or chicken breasts. Cut the chicken into small, even pieces so they cook evenly.

    Butter: Adds flavor to the chicken tastier and helps it turn golden brown.

    Garlic: Fresh minced garlic adds so much flavor, but be sure to reduce the heat to low before adding it to the skillet so it doesn't burn.

    Parmesan cheese: Using pre-grated store-bought Parmesan cheese for this recipe is fine, and in fact, it's almost better because it's texture is coarse and therefore will melt slowly.

    Ingredients
      

    • 1 lb. boneless, skinless chicken breast halves
    • Kosher salt and fresh ground pepper
    • 4 Tbs. butter
    • 3 cloves garlic, minced
    • ⅓ cup grated parmesan cheese
    • ¼ tsp. crushed red pepper flakes, optional

    Instructions
     

    • Cut the chicken into 1½ inch pieces and toss with salt and pepper.
    • In a large skillet, preferably cast iron, heat 3 Tbs of the butter over medium-high heat. Add the chicken in a single layer and cook, stirring occasionally, until just golden and cooked through, about 6 minutes. Transfer to a plate.
    • Melt the remaining 1 Tbs. of butter in the skillet over low heat. Add the garlic and cook, stirring, for 30 seconds. Return the chicken to the skillet with any accumulated juices. Remove the skillet from the heat and stir in the Parmesan and red pepper flakes.
