Garlic Parmesan Chicken Bites
Ingredients
- 1 lb. boneless, skinless chicken breast halves
- Kosher salt and fresh ground pepper
- 4 Tbs. butter
- 3 cloves garlic, minced
- ⅓ cup grated parmesan cheese
- ¼ tsp. crushed red pepper flakes, optional
Instructions
- Cut the chicken into 1½ inch pieces and toss with salt and pepper.
- In a large skillet, preferably cast iron, heat 3 Tbs of the butter over medium-high heat. Add the chicken in a single layer and cook, stirring occasionally, until just golden and cooked through, about 6 minutes. Transfer to a plate.
- Melt the remaining 1 Tbs. of butter in the skillet over low heat. Add the garlic and cook, stirring, for 30 seconds. Return the chicken to the skillet with any accumulated juices. Remove the skillet from the heat and stir in the Parmesan and red pepper flakes.
