- Keep the toppings on the side. Don't put salsa, sour cream, or guacamole on top of the nachos, or they'll get soggy.
- Serve them hot. Keep the nachos warm on a platter or baking sheet and serve them right away. They'll disappear before the cheese cools down.
- Choose good chips. Look for sturdy chips that are not too salty. Brands I like are Santita and Mi Nina , or try freshly made ones from a Mexican restaurant.
- Use the right cheese. Mix Cheddar and Monterey Jack for flavor and melty-ness. If you want extra gooeyness, add some mozzarella, American, or Muenster cheese.
- Keep it mostly one layer. Lay out the chips without overlapping too much. Sprinkle half the cheese, then add more chips to cover any gaps. Add meat or beans if you like, then the rest of the cheese.
- Add toppings like chili, cooked meat, beans, scallions, cilantro, lettuce, tomatoes, and jalapeños for extra flavor and texture.
- Bake at 350°F for about 8 minutes. Don't make the oven too hot or the cheese will get oily.
How much should I make?
For a large sheet pan, use twice as much cheese as chips by weight. For example, 8 ounces of chips to 16 ounces of cheese. If you're adding meat or beans, use 2 to 2 ½ cups total for a large sheet pan.
