- 1 cup smooth peanut butter
- ¾ cup granulated sugar
- 1 large egg
Preheat the oven to 350°F. Line 2 baking sheets with parchement.
In a large bowl, combine the peanut butter, sugar, and egg and mix until well blended.
Scoop heaping tablespoonfuls of the dough out onto the prepared baking sheets (using a cookie dough scoop works great for this). Roll each into a ball, then press with a fork to create a cross-hatch pattern. Dip the fork in flour to prevent it from sticking to the dough.
Bake until puffed and the edges are set, 10 to 12 minutes. Let cook on the cookie sheet until firm.
Store the cookies in an airtight container at cool room temperature for up to 5 days.
