Easy Italian  Peperonata

This easy to make, delicious mix of colorful peppers, onion, garlic,  herbs, olives, and capers slowly  stewed in fruity extra-virgin olive oil makes the perfect appetizer.

Here's what you need:


Cook the peppers and onion in olive oil, stirring often, until softened, about 15 minutes.

Add the garlic, olives, herbs, capers, pine nuts and vinegar and cook, stirring often, for 5 minutes. 

Serve with baguette toasts.
