These fun Italian tri-colored cookies, called Neapolitan cookies, are really quite easy to make—it’s just one cookie dough!

Let's get started!  Make the dough: Beat butter and sugar until light and fluffy. Beat in egg and vanilla. Beat in flour mixture until blended.

Divide dough into thirds. Mix red food coloring and almond extract into one; Spread evenly in bottom of Lined loaf pan. Mix nuts in another portion; spread over first layer. Mix melted chocolate into remaining batter and spread over top.

Cover and chill overnight. Remove dough from pan, then cut in half lengthwise,

Cut each crosswise into 1/4-inch thick slices.  Place slices about 1-inch apart on parchment-lined baking sheet.

Bake @350°F until edges are firm, 10 to 12 minutes. Let cool on wire rack and dust with confectioners' sugar.
