Easy One Minute Omelet
This easy one minute omelet is based on Jamie Oliver's recipe. There's not many recipes that are as easy and tasty as this. The omelet is perfect anytime of day or as a late night snack! This is best made with a 10-inch nonstick pan.

- 2 large eggs
- Salt and freshly ground black pepper
- Olive or sunflower oil
- ⅓ cup finely grated cheddar cheese
In a small bowl, beat the eggs with a fork and season with salt and pepper.
Heat a 10-inch nonstick pan over medium heat. Add a little oil and swirl the pan to coat. Add the eggs and swirl the pan to coat the bottom. Cook until almost set, 45 seconds to 1 minute. Sprinkle the surface with the grated cheese. Turn off the burner and let the omelet sit for a few seconds for cheese to begin to melt.
Fold the omelet into thirds and slide it onto a plate.
