Sheet-Pan Pesto  Gnocchi and Vegetables

Ready in under 30 minutes! Here's what you'll need: Potato gnocchi Bell peppers Cherry tomatoes Broccoli florets Red onion Garlic Olive oil Pesto Parmesan

Combine gnocchi, bell peppers, tomatoes, broccoli, onion, garlic, salt and pepper in a large bowl. Drizzle with olive oil and toss to coat.

Spread gnocchi mixture out evenly on baking sheet. Bake @425°F  until tender and caramelized, about 20 minutes.

Drizzle with pesto and toss gently to coat.

Serve with grated  parmesan cheese  and enjoy!
