Easy Roasted Delicata Squash

There's a lot to love about Delicata squash. It's simple to prep (needs no peeling), easy to slice, and roasting brings out its sweet nutty flavor!

Cut the squash in half lengthwise and use a spoon to scrape out the seeds and pulp.

Cut the squash into ½ inch thick half moon slices.

Toss the slices with olive oil  and salt.

Arrange slices in a single layer on baking sheet. Roast at 425°F until tender and caramelized, about 25 minutes, turning once.
