Easy Skillet Vegetable Lasagna

olive oil onion red bell pepper zucchini garlic cloves dried basil dried oregano crushed red pepper flakes lasagna noodles canned crushed tomatoes  1 ½  cups part-skim ricotta cheese 1 cup (4 oz.) shredded mozzarella Freshly grated Parmesan cheese

Ingredients: olive oil onion red bell pepper  zucchini  garlic  dried basil dried oregano crushed pepper  lasagna noodles canned crushed tomatoes ricotta cheese  mozzarella parmesan cheese

Heat oil in large skillet and sauté vegetables until softened. Add garlic, herbs, pepper flakes, salt and pepper.

Stir in tomatoes. Break lasagna noodles into large pieces and add to pan, nestling them under sauce. Cover and simmer 25 minutes.

Gently stir in ricotta cheese. Sprinkle top with mozzarella and parmesan cheese. Cover and cook until cheese has melted.

Broil for a few minutes to brown top if desired. Scoop lasagna into shallow bowls and serve.
