Cranberry Orange  Cake

The cake is baked is hands down one of the most delicious and festive cakes you can make during the holiday season.

Remove the zest from one  orange. Combine it with  1 cup of sugar and process  until finely ground.

Make the batter as directed  and fold in the cranberries.

Scrape the batter into a greased 9 x 5-inch loaf pan. Bake for 50 minutes, until fully risen, golden brown and a cake tester inserted near center comes out clean.

Let the cake cool 10 minutes, then remove from pan and cool completely. Make the glaze and spread it over the cooled cake.

Make the Sugared Cranberries: Rinse  cranberries. While still damp, work in small batches and roll them in granulated sugar. Set on a plate to dry.

Garnish the cake with the sugared cranberries and additional orange zest.  Enjoy!
