Beer 3-Cheese Sauce

This easy beer cheese sauce is terrific served with French fries, steak fries, or pretzels. I use a combination of Parmesan, mozzarella, and gruyere for the sauce, but really any cheese that melts would work well. Also, for a great beer flavor, use one that is full-bodied, such as a stout or brown lager.

Ingredients

  • 3 Tablespoons butter
  • 3 Tablespoons all -purpose flour
  • 1 ½ cups milk
  • ½ cup beer such as stout or lager
  • 1 Tablespoons Dijon mustard
  • ½ cup grated Parmesan
  • ½ cup shredded mozzarella
  • ½ cup grated gruyere cheese

Instructions

  • In a medium saucepan, heat the butter over medium heat until melted. Whisk in the flour and cook, whisking, for 30 seconds. Whisk in the milk and beer, and cook, whisking often, until the mixture starts to bubble. Add the cheeses, one a time, and whisking well after each addition. Cook, whisking often, for 4 to 6 minutes, or until thickened.
