Maple Walnut  Granola with Dried Cherries and Coconut

This granola is made with nutty oats, nuts, dried cherries, coconut and maple syrup. It's delicious eaten as is, served with yogurt and berries, or given as gifts.

Process butter, flour, brown sugar, baking soda, salt, cinnamon and vanilla until ground. Add to oats in bowl; stir well. Add maple syrup and oil; stir to coat. Transfer to pan and bake 50 minutes. 

Combine walnuts and remaining maple syrup; sitr to coat. Spread nuts on small baking sheet and bake, stirring occasionally, until golden about 20 minutes.

Transfer baked, cooled granola to bowl and stir in walnuts, dried cherries and coconut flakes.
