Blueberry Buckle Muffins

Packed with sweet juicy berries, a tangy, tender crumb and buttery crumb topping, these muffins are really delicious and so simple to make.

MUFFINS Unsalted Butter | Sugar Egg | Lemon Or Orange Zest Flour | Baking Soda Salt | Milk Fresh Blueberries CRUMB TOPPING Unsalted Butter | Sugar Flour | Cinnamon

Beat the butter and sugar until pale and creamy using an electric mixer.

Beat in the egg then zest until well blended.

In a medium bowl, whisk together the flour, baking powder, and salt.  Alternately beat in the flour mixture with the milk.

Fold in the berries.  Spoon the batter into prepared muffin pan cups, filling 2/3 full.

Make the topping: In a small bowl, combine the butter, sugar, flour, and cinnamon. Mix until crumbly.  Sprinkle or pat the topping over the muffins.

Bake until golden brown, 20 to 25 minutes.  Transfer muffins to a wire rack and let cool.
