The uses for this easy Strawberry Compote (strawberry sauce) are endless. A simple mixture of fresh strawberries, sugar and orange juice cooked until its chunky and saucy, it's great served over ice cream, cake slices, pancakes,  waffles, oatmeal, or halved scones. Try it swirled into vanilla yogurt, whipped cream or into a coffee cake batter. this is great when juicy, ripe strawberries are in season, but it also can be made with frozen berries.

1 pint fresh strawberries, hulled and halved
1/3 cup granulated sugar
2 Tbs. orange juice

1. Combine the strawberries, sugar and orange juice in a saucepan. Cook over medium heat, stirring occasionally, until the strawberries soften and their juices thicken slightly, about 10 minutes. Remove from the heat.

2. Let cool and serve. If not serving right away, store airtight in the refrrgerator for up to 3 days.
